Eggs Benedict With Citrus Hollandaise
What you'll need

Egg yolks
2 tbl
Grapefruit juice
1 tbl
Grapefruit Zest
1/2 cup
Clarified Butter
1 tbl
Water
English muffins
Canadian bacon
1 tbl
Fresh Parsley
Make clarified butter by slowly melting butter on the stove top and removing the milk solids that float to the top

Whisk egg yolks and water until light and fluffy

Place egg yolks over double boiler and whisk until tripled in size

Add clarified butter and whisk vigorously until doubled in size

Add grapefruit juice and zest and whisk to combine

Poach eggs for three minutes

Place poached egg on top of toasted English muffin and Canadian bacon

Top with citrus Hollandaise
