El Salvador: Curtido
Slice onion very thinly.
Add shredded cabbage, shredded carrots and onion to boiling water and cover for 10 minutes.
Drain then add salt, oregano, crushed red pepper and bay leaves, then mix.
Transfer to a sterilized mason jar, cover with apple cider vinegar, then seal.
Place in refrigerator for at least 6 hours, then serve with pupusas.
