Emily's English Roasted Potatoes!
Peel 3 lb potatoes, cut into 1 1/2 to 2-in pieces

Add two tablespoons salt to boiling water

Add potatoes, return to a boil, lower the heat then simmer for 8 minutes.

Drain potatoes, put them back into the pot and cover. Shake pot for about 5 seconds to roughen potatoes.

Place potatoes on a rack for at least 15 min to dry. Meanwhile, pour 1/2 cup olive oil into pan & heat in 425° oven for 5-7 minutes until smoking hot

Place potatoes in pan, toss to coat. Lower oven to 350°, bake 45-60 min, turning occasionally until potatoes are brown & crisp outside, creamy inside.

Be sure to turn them occasionally!

Add 1-2 tsp salt and parsley to taste, toss gently to coat.
