Escarole, Bean & Sausage Soup
Delicious soup with just a few ingredients.

Heat 1 TBSP basting oil.

Brown 1 1/2lbs mild, Italian sausage. Remove when cooked & set aside.

Chop one medium onion (approx. 1c)

Heat 2 tbsp of basting oil & add onions. Cook until soft, approx. 1-2 minutes.

Add 3 cloves garlic & stir for 1 minute.

Add 1-15oz pkg chopped escarole, cook approx. 1-2 minutes until wilted .

Season with salt & pepper.

Add 1-15.5oz can of cannellini beans, drained and rinsed.

Pour in 64oz chicken broth.

Stir in cooked sausage.

Increase heat to MED-HIGH, bring to boil. Reduce heat & simmer for 10 minutes.

Add 1c ditalini pasta, simmer 10 mins.
