Add cream, honey, coffee, brown sugar, and cocoa powder to a heavy saucepan.

Whisk over medium heat until the sugar dissolves.

Bring it to a boil and cook, whisking periodically. Remove from heat after 5 minutes.

Add salt and half the chocolate, and stir until smooth. Add remaining chocolate, and repeat.

Add vanilla and butter. Whisk until smooth.

Pour into clean pint jars.

Once cool, add lids and close. Store in the fridge.

Gently reheat and serve over ice cream. Or on a spoon!
