Coat your roast with our sweet and salty beef rub
Arrange sweet potato slices in a circular pattern
Sprinkle with the same beef rub, and top your roast on top. Roast for 20 minutes at 425°F
Combine corn and tomatoes in a baking pan and top with olive oil and beef rub. Roast for 20 minutes
Spoon roasted corn salad over eye of round roast, then slice, serve, and enjoy!
