Farinata (Chickpea Flour Pancake/flatbread)
Whisk together chickpea flour, water and olive oil and allow batter to rest and hydrate at least 1 hour or overnight at room temperature
When ready to bake skim off the foam for a more stable batter
Heat pan in the oven while it preheats - once hot carefully remove hot pan from oven - drizzle in olive oil then the batter - and bake 10-12 min
Optional topping - make your brown butter sage mushrooms - heat olive oil and butter over medium heat
Bring it up to a sizzle
Add mushrooms & cook until softened then add sage and then cook until butter is browned and sage is crisp - by that time your farinata should be done
The edges should be golden and crisp - if you want yours further browned stick it under the broiler for 1-2 minutes
Serve right out the oven simply with a sprinkle of salt & pepper or top with the juicy brown butter sage mushrooms
Or chopped chives, prosciutto and shaved Parmesan cheese
