Fast And Delicious Dinner Rolls
4 c flour, 1/4 c sugar, 2/3 c milk, 4 Tbs butter, 1 Tbs yeast, 3/4 c warm water, 1.5 tsp salt
Mix yeast with 3/4 c warm (not hot!) water.
Give it a little help and add a bit of the 1/4 c sugar. Leave it alone for 10 minutes to bloom.
THIS is activated yeast. Notice the plentiful foam!
Slice the butter and add it to the milk.
Warm the milk and butter then let it cool.
Preheat oven to 180*F
In your mixing bowl, add flour, sugar and salt.
Whisk to mix.
Add the yeast/water, and warm butter/milk to dry ingredients. Mix with dough hook for 3-4 minutes.
Until it pulls away from the bowl and looks like this! Smooth and slightly sticky.
Cover tightly and let it rest until doubled. About 20 minutes.
Butter your pan.
Lightly flour your surface.
Dump dough onto the floured surface and press into a rectangle.
Cut the dough into 15 equal-ish pieces.
Fold under the corners of each piece to make a ball. Place in pan.
Put rolls into preheated oven and turn it OFF. Let them proof about 30 min. until they look like...
This! Remove from the oven. Let them rest while the oven preheats to 375*F.
When oven is preheated, pop them in for 14-16 minutes.
Beautifully golden brown, fluffy rolls!
