Fat Free Moist Tea Loaf
An easy Tea Loaf with no fat & very little sugar

Place 380g of dried mixed fruit & 50g of caster sugar in a large bowl

Pour over 150ml of hot tea or enough to just cover the fruit. Cover & leave to soak overnight

Next morning, add 1 large beaten egg and stir into the mixture

Sieve in 225g of self-raising flour

Fold the flour into the mixture

Spoon the mixture into a lined 2lb loaf tin

Spread the mixture evenly & level it with the back of your spoon

Place on the middle shelf of the oven & cook at 170C/340F for 70 minutes

Remove from the oven & leave it to cool on a wire rack

Once cooled, cut into slices & serve
