Fauxveeta Vegan Cheese Sauce
Ingredients: potato, carrot, onion, garlic, almond milk, turmeric, nutritional yeast (optional), salt, pepper
Add chopped potatoes, carrot, onion and garlic to stock pot.

Fill with water and boil until tender. Drain.

You’ll need a blender to make your sauce. I use Blendtec.

Add veggies to blender with spices and almond milk.

Blend on high for 30-40 seconds until smooth.

Bring to simmer on stove to warm.

Serve over cooked macaroni for vegan, plant-based mac and cheese.

What can you use this sauce for?
Add salsa or Rotel to make chile con queso.
Drizzle it over loaded plant-based nachos!
Pour it over a baked potato and steamed broccoli. So many delicious possibilities.
