Santorini yellow split peas vs. conventional yellow split peas.
Add 1 cup rinsed yellow split peas, salt, onion, garlic, celery, and carrot to a pot.

Pour in 4 cups of water. Bring to a boil.

When boiling, remove scum from surface. Add bay leaf. Partially cover. Simmer for 1 hour.

Remove bay leaf. Add 1/4 cup of olive oil.

Let the fava cool. Then purée using an immersion blender or regular blender until smooth.

Adjust seasonings to taste. Garnish with capers, caper berries, or caramelized onions.
