Fiddle Head & Carmelized Onion Galette
Wash fiddleheads well then boil/steam before cooking with them (asparagus makes a good substitute)

Heat olive oil and butter in skillet and add onions cooking them until softened and caramelized

Remove from pan or slide them over to one side of pan, add remaining olive oil & mushrooms & garlic

Sauté for another 3 min and then remove from heat and allow to cool

Mix together the egg, onions, ricotta, cream, cheese, sage or your choice of herb

Season with salt and pepper

Roll out your pie Crust - storebought or homemade (homemade recipe in post)

Transfer to sheet-pan

Empty out cheese mixture onto crust and spread out evenly leaving a 1-2 inch border

Place mushroom garlic mixture over cheese

Then place the fiddleheads over

Fold in the edges

Brush with egg wash

Sprinkle with sesame seeds for a little extra texture (optional) then bake

Slice and enjoy!
