FINANCIERS -mini Almond Cakes
Butter 130 grams,egg whites 3, almond flour 75 grams, 75 grams flour, icing sugar 110 grams

Roast the almond flour(you can make st home too) for 5 minutes in a preheated oven at 300 F

Melt the butter and let it brown for a couple of minutes

Prepare your pan, I have used mini muffin pan with easy magic cake release

Butter is melting and changing colour

Strain the melted butter and cool

Place almond flour, flour and icing sugar in a bowl and whisk, sift it your icing sugar has lumps

Whisk egg whites lightly to break, add it to your flour mixture

Whisk for a couple of minutes, add butter

Whisk until homogeneous mixture is obtained

Pour in your prepared pan filling no more than 2/3

Bake in a preheated oven at 350 F for 10 minutes until done

They are ready, perfect with a cup of tea or coffee in winter afternoon
