Fire-Roasted Tomato Tortellini Soup
Prep the onion and garlic.

Add butter and olive oil to stockpot, over medium-high heat.

Sauté the onion until softened.

Add garlic, salt, pepper, and dried basil. Stir for about a minute.

To a large blender, add the crushed tomatoes, diced tomatoes, and the onion and garlic sauté.

Attach lid to blender and pulse until smooth.

If the blender is too full, you can do this in batches.

Pour contents of blender back into stock pot. Add chicken broth and heat to a slow boil.

Then add the sugar, milk, and cream - and bring to a simmer, stirring often.

Then add the tortellini and cook for a few minutes, until tender.

The pasta cooks super fast. Remove from heat and serve!

Enjoy with freshly grated Parmesan cheese!
