Prep is key. I started with 1½ cups chopped mushrooms I have prepped and keep frozen. Add 2 tbl salted butter & ¼ c water. Cook on md-high.

It will take a while but the goal is to cook until liquid is gone. Stir often.

While mushrooms cooking, chop 1 small brick Kerry Gold Blarney Castle Gouda into small chunks.

When the liquid is all cooked out your mushrooms should make a paste. Set aside.

Take your flank steak and tenderize both sides.

Make sure it is pretty thin. I didn't marinate it this time, but will probably do so next time with a balsamic or soy sauce marinade.

Season as desired. We used Prime Rib rub.

Set you Deluxe Electric Grill & Griddle to GRILL. Times: 5 min = blue rare, 7 min = md rare, 10 min = md well (suit your preferences)

While the grill is heating start your layers with the mushrooms.

Make sure they cover the meat evenly. You can also add peppers and prosciutto at this stage if desired.

Next add spinach.

The cheese is only on the end for easy rolling.

Roll from end into roll.

When the grill says ADD, place meat seam down on grill.

This is rare for my daughter. Once seared at 5 min., we grilled each person's individually.
