Fluffy Lemon Ricotta Waffles
Whisk flour, baking powder, baking soda & salt together

Rub sugar and lemon zest together to infuse the sugar

Whisk together the eggs,

butter, milk, ricotta, lemon juice & vanilla

Whisk the lemon sugar into the dry ingredients

Combine dry & wet ingredients

Stir until combined - a few lumps in the batter are fine (don’t over mix)

Dollop approx 1/4c of batter into preheated and greased waffle iron
8
Serve with syrup, dusted with powered sugar, with berries.....or any way you like your waffles
