Brown the butter in a light coloured saucepan (to gauge browning) and add it to a large skillet

Once the butter is hot, add 5 tbs tomato paste and the zest of 1/2 medium lemon

Stir to combine and cook for a few minutes before adding the juice of the lemon half

Add 1 tsp balsamic vinegar and 1 tsp light brown sugar. Stir & add 1/4 cup vodka. Remove from heat

Stir in 1/2 cup lactose free cream, a little at a time. Add pepper and chilli flakes if you fancy

Add 250g gluten free spaghetti to boiling salted water. I like to use a wok. Cook until al dente

Once pasta has cooked, add to the sauce. No need to heavily drain pasta - pasta water is an asset!

Pasta water emulsifies the sauce, making it smooth and glossy

Stir to combine and add 1/2 cup pasta water. Stir in 75g finely grated Parmesan until smooth

Season for taste and plate up

Serve with a little extra freshly and finely grated Parmesan
