French Crullers/Mexican Churros
100 grams butter,200 grams water, pinch of salt,dash of vanilla,1 tablespoon sugar,100 grams flour
Vanilla glaze: 3/4 cup icing sugar,1/2 teaspoon butter,1 tablespoon milk
Chocolate glaze: 2 tablespoon cocoa,4 tablespoon icing sugar, 1 teaspoon butter,1 tablespoon milk

Boil all of them on medium heat in a heavy base sauce pan

Once boiled, remove from heat and add 100 grams of all purpose flour

Stir until mixed and return to heat

Cook until consistency of mashed potatoes, somewhat shiny and it falls off spoon slowly

This step is really important so pay attention to this

Transfer into a mixing bowl and let it cool by beating a little

Once cooled, start adding eggs one by one, you need 3-4 eggs

Check consistency after addition of every egg

Keep mixing after every egg, you can do this by hand mixer also or even by hands

Cut pieces of parchment paper for french cruller and prepare two piping bags fitted with star tips

Heat oil in deep pan,it should be medium hot and a dough dropped should come right up

Fill in your piping bags with the choux pastry batter

Start piping your batter directly into the oil using a scissor to cut, be careful of hot oil

They are done in approximately 3 minutes, 1.5 mins on each side

Place directly into a bowl of sugar 1 cup and cinnamon powder 1 teaspoon

Shake to coat completely, the hot churros will caramelized and stick to sugar slightly

Pipe your french cruller on parchment paper pieces

Put them in oil with paper and in a few seconds the paper can be removed easily

This step ensures that shape of round crullers remain intact

Fry them golden brown and drain on a kitchen towel
