Boil small potatoes in salted water until tender.

Combine Extra-virgin olive oil, salt and black pepper.

Add Dijon mustard, grainy mustard, chopped cornichons, vinegar & shallots.

Whisk with a fork to combine.

Add freshly chopped dill and whisk to combine.

Add the small potatoes (still warm) and toss to coat with the vinaigrette.
