Fresh Rhubarb Bread Pudding
Preheat oven to 325 degrees.

I used Italian Bread as a drier, hearty bread.

Toast bread, remove crusts and cube. Place in greased Rockcrok Everyday Pan or a 2 qt. casserole dish.

Warm milk & butter in microwave using 3 C. Silicone Prep Bowl. Pour over bread cubes & let stand 15 minutes.

Whisk together eggs, sugar, cinnamon & salt.

Dice 2 C. rhubarb using Rapid-Prep Mandoline.

Stir diced rhubarb into egg mixture.

Pour mixture over the soaked bread, stir gently until evenly blended.

Chop walnuts with food chopper & sprinkle on top.

Bake in 325 degree oven about 50 minutes, until nicely browned on top. Let stand 10 minutes before serving.Enjoy!
