Funfetti Protein Cookies Recipe
Preheat your oven to 325 and line a cookie sheet with parchment paper

In a microwave safe bowl, melt cashew butter until creamy and smooth, about 1 minute in the microwave

Using an electric hand mixer, beat together the melted cashew butter, butter extract, and honey until well combined

Add in 1 egg and beat until well combined

Add vanilla whey protein powder, baking soda, and a pinch of salt. Stir until well mixed and a sticky, wet dough forms

Pour sprinkles into a small shallow plate with sides. Roll cookie dough into 1 Tbsp sized balls. Roll the top half of the cookies into the sprinkles

Press the cookie dough balls down to about 1/3 of an inch thick

Bake for about 12-13 minutes until the tops feel just set

Let them cool completely on the pan
