Gajar ka Halwa (Carrot Halwa)
A recipe close to my heart, bringing warmth always....
Grate carrots. In a pot add milk and cardamom pods along with carrots to cook on medium flame

Let this cook till all the milk dries up. Will take about an hour or more.

Once the milk dries, add sugar. The mixture would get watery again, let this cook more till dry

The water released after adding sugar should be completely dry before adding ghee

Add desi ghee now & do the “bhunai” till the halwa starts leaving edges of the pot.

Garnish with khoya, almonds, pistachios & cashewnuts
