Melt 1/2 cup ghee and sputter 3 cardamom pods

Add 1 kg shredded carrots

Sauté the carrots in the ghee on medium flame for 2 minutes

Add 1 Litre whole milk and bring it to boil

Cover and cook on low flame till the milk is almost evaporated. Keep stirring in between. Takes approx. 1 hour

Once most of the milk is evaporated, turn flame to high and keep stirring halwa vigorously

Add 3/4 cup sugar (I used 1/3 cup Stevia to keep it diabetic friendly) and 1/2 cup cream

Add chopped nuts of choice, keep stirring

And it’s ready ! You can add khoya at this stage and mix it in while it’s hot.
