Sauté minced leek in a skillet with olive oil for some minutes.

Add red lentils, beets, ginger, water and tomatoes.

Bring to a boil, then allow to simmer covered for 20 minutes, stirring occasionally.

Stir in coconut cream, along with garam masala, and salt.

Let it simmer for another 3 minutes.
