Garlic Parmesan Crispy Roasted Potatoes With Thyme
Brush pan with melted butter

Using a sharp knife, thinly slice the potatoes and start placing them in the pan

I had leftover sweet & purple potatoes so I thought It would be fun to make a multi-potato version

Arrange the potato slices vertically but at a slight angle

Use whatever potatoes you might have on hand just slice them roughly same thickness

You can also use a mandolin (watch your knuckles if you do)

If you want the original version with just one variety of potato - I recommend Yukon gold

Get them all in there

Brush edges with remaining melted but and pour over the rest.

Sprinkle over the minced garlic

Season generously with salt and pepper

Sprinkle over the thyme as well

Remove and sprinkle with Parmesan cheese and place back in the oven for a few more minutes
