Look for garlic scapes at your local farmer’s market or grow ‘hard neck’ garlic and cut your own!

To a food processor add 1 C butter with 1 cup roughy chopped scapes.

Next add 2-3 T grated Parmesan, S&P to taste, and 1 tsp crushed red pepper flakes. Mix.

On a sheet of parchment, scoop out mixture into a rough log shape.

Roll tightly but gently, twist the ends to seal & compress the mix. Tie off with string.

Refrigerate to firm it up. Slice into coins. Or freeze & slice off what you need.
