General Tso Chicken Stir Fry
1 small onion, 1 med zucchini, 1/4 purple cabbage, 1 red pepper, 1 cup snap peas, & 2 medium carrots

Slice: Onion/Zucchini/Cabbage/Pepper Grate: Carrot

Sauce: 1/4 c honey, 1/3 c soy sauce, 2 tbsp Sriracha sauce, 3 garlic cloves

Combine in small bowl, press garlic into mixture. Whisk together.

Rice in 3 Qt Micro Cooker: 1 c long-grain white rice & 1 1/2 c water. Microwave 12-15 min

Add 1 tbsp oil to wok, heat 3-5 min. Add Chicken, undisturbed 3 min, stir-fry 3 min remove chicken.

Add 2 tbsp oil to pan, heat 2-3 min, add onion, carrot, & pepper. Stir-fry 2-3 min

Add zucchini & snap peas, stir-fry 2-3 min.

Add chicken, cabbage, & sauce to wok. Stir-fry 3-4 more minutes.

Serve over rice. Enjoy!
