Prepare the crust by mixing the GF flours & sugar

Add the oil & cold water then mix until well incorporated

Press the dough on the prepared baking pan & bake on medium heat for 20 mins until it’s golden brown

Meanwhile prepare the filling and whisk the eggs & lemon zest

Add the sugar, lemon juice & GF flour then whisk again until well incorporated

Remove the crust after 20 mins or when it’s slightly golden brown

While the crust is still hot, pour the filling and bake again for 30 mins on medium heat until brown

When it’s done, leave at room temperature to cool a bit then refrigerate it for 4 hours minimum
