Prepare brownie according to packet instructions. I used Ghirardelli brownie mix (from Costco)
1
Use a small cookie cutter (round) to cut out 12 circles. Freeze this. Eat the rest of the brownie.
2
Melt in micro: 1.5 cups choc chips, 3/4 cup creamer (I used hazelnut flavoured), & a pinch of salt.
3
Prepare gelatin : 1/2 tbsp gelatin in 2 tbsp cold water. Mix well
4
Whisk 1 cup cream till stiff peaks form
5
Melt gelatin 10 seconds. Mix it in well with melted (slightly cooled) choc mixture.
6
Start folding whipped cream to choc mixture. Do 1/2 first, then remaining till all incorporated well
7
Fill silicone moulds with choc mixture. Place frozen brownie & place over mousse. Freeze 3-4 hours
8
Whisk together 3 tbsp gelatin with 1/2 cup cold water. Keep aside to let it set
9
Simmer:1/2 cup water,1.5 cup sugar, 1/2 can condensed milk.Remove from flame. Whisk in gelatin
10
Add 12 oz white choc chips. Use hand blender to blend choc into hot condensed milk- sugar mixture
11
Divide prepared glaze into bowls. Add food color. Combine bits of each (cooled) and swirl it a bit
12
Remove mousse from moulds for the glaze
13
Pour the swirled glaze over mousse domes & watch the magic unfold. Let it set for 15 mins.
