In medium bowl,whisk together flour, baking powder, salt & thyme.

In a separate larger bowl, whisk together sugars & olive oil until smooth and lump free

Add eggs, vanilla, lemon zest & juice. Whisk to combine.

Gently fold in half the flour mixture, then add other half. Fold in grated zucchini.

Pour batter into greased & floured loaf pan. Bake @ 350 F for 30-35 min
