Gluten Free Apple Cinnamon Muffins

Preheat oven to 350 F. Dice up an apple and set aside.

Put maple syrup and softened butter in a stand mixer until well combined.

Combine dry ingredients in a large bowl and whisk to combine.

Add in the eggs, applesauce, and vanilla extract to the other wet ingredients and stir together.

Pour the dry ingredients into the wet ingredients and stir with a spatula until well mixed.

Add in the diced apples to the batter and gently stir to incorporate.

Spoon the batter into a silicone muffin tin and bake in the oven for 25-27 minutes.

Remove from the oven and let cool for 5-10 minutes.

Brush the top of a muffin with melted butter.

Dip the muffin top into a cinnamon sugar mixture.

Repeat with each muffin until all muffins are covered.
