Gluten Free, Vegan Chocolate Mug Cake

Whisk 2 tbs cocoa, 3 tbs boiling water and 2 tbs oil in a bowl. Add 3 tbs light brown sugar and mix

Add 1 tbs tapioca flour, 1 tbs whole grain GF flour of choice (sorghum, brown rice, quinoa)

Add a pinch of salt, 1/2 teaspoon baking powder and (optional) 1 teaspoon vanilla bean paste

Decant the batter to a large mug with space for the batter to rise. Place in microwave for 1 minute

Add some ice cream and serve!
