Gluten-Free Sourdough Bread and Butter Pudding
You need 1/2 -3/4 loaf slightly stale gluten-free sourdough.

Heat sultanas up with fresh orange juice then leave to rest.

Meanwhile slice the bread to medium thickness.

Cut into triangles (crusts removed) and spread both sides with butter.

Then spread marmalade over the buttered bread.

Layer the bread slightly overlapping and sprinkle over orange juice soaked sultanas.

Assemble the second layer of bread and scatter over the rest of the sultanas.

To make the custard whisk eggs and sugar together.

Heat cream and milk with cinnamon, ginger, nutmeg, vanilla and lemon zest.

Whisk the hot cream into the eggs.

Pour the custard over and rest for 2 hours.

Bake for 30 minutes.

Rest for 30 minutes before dredging with icing sugar.
