Gluten-Free Vegan Apple Pie
Mix together the coconut oil, coconut sugar, apples, vanilla, cinnamon + salt in a pan.

Cook for 20 minutes, stirring occasionally. Add cornflour (cornstarch) to thicken.

Mix together all the ingredients for the pastry dough.

Divide the pastry into two and press one half across the bottom and up the sides of a pie dish.

Roll out the remaining pastry dough to make the pie crust lid.

Transfer the apple mixture into the pie crust.

Cover with the pastry lid and make a small slit in the centre.

Bake in the oven for around 30 minutes.
