Gluten-Free Vegan Chocolate Mousse Cake
For the chocolate cake: mix together all the ingredients for the batter.

Transfer into a springform baking tin.

Bake in the oven for 15 minutes. Leave to cool.

For the chocolate mousse: place the cooked sweet potatoes, cocoa powder, vanilla, salt, maple syrup + coconut oil in a food processor.

Whizz until completely smooth.

Spread the chocolate mousse over the sponge.

For the chocolate ganache: melt the chocolate in a bowl.

Add the plant-based milk and mix well.

Pour it over the mousse layer. Place in the fridge for a few hours to set.

Decorate when the chocolate ganache has set.

Remove from the springform tin.
