Gluten-Free Vegan Christmas Pudding
Place the dried fruit, grated apple + spices in a bowl and cover with brandy/sherry. Soak 24 hours.
Mix together in a bowl with all the other ingredients.
Transfer into a pudding basin or glass bowl. Place in a pan and fill with water halfway up the bowl.
Place a circle of baking paper on top of the pudding batter. Cover top and sides of bowl with foil.
Simmer for 2 hours. Leave to cool + remove pudding from the bowl by turning upside down on a plate.
