Gluten-Free Vegan Christmas Pudding
Place the dried fruit, grated apple + spices in a bowl and cover with brandy/sherry. Soak 24 hours.

Mix together in a bowl with all the other ingredients.

Transfer into a pudding basin or glass bowl. Place in a pan and fill with water half way up the bowl.

Place a circle of baking paper on top of the pudding batter.

Cover the top and sides of the bowl with foil. Bring to the boil, turn down the heat and cook for 2 hours.

Leave to cool and run a knife around the edge of the bowl.

Turn upside down onto a plate.
