Gluten-Free Vegan Cornbread Muffins
Mix together all the ingredients for the muffin batter in a bowl.
Transfer the mixture into a well-greased muffin tin. Fill the batter right up to the top of the muffin tin so that they rise nicely.
Bake in the oven for around 12 minutes, until an inserted skewer comes out clean.
Leave to cool slightly before removing from the tin and transfer to a wire rack to cool completely.
