Gluten-Free Vegan Fruit Cake
Place chopped dried fruits, walnuts and spices in a bowl and cover with sherry. Soak for 24 hours.

Mix together with all the other ingredients for the cake batter.

Transfer into a loaf tin lined with baking paper.

Sprinkle over flaked almonds to decorate, if desired.

Bake in the oven for 45 minutes.

Leave to cool on a wire rack.
