Mix together all the ingredients for the batter in a bowl.

Transfer into a loaf tin lined with baking paper.

Bake in the oven for around 45 minutes, until an inserted skewer comes out clean.

Transfer onto a wire rack to cool before applying the frosting.

To make the frosting: place the cashew nuts, maple syrup and lemon juice in a food processor.

Whizz until completely smooth.

Spread over the frosting.
