Gluten-Free Vegan Linzer Cookies
Mix together all the ingredients for the cookie dough in a bowl.

Lay out a sheet of baking paper and roll out some of the dough with a rolling pin.

Cut out 12 circular shapes using a circular cookie cutter.

Transfer these onto a baking tray lined with baking paper.

Roll out the remaining dough and use the same circular cookie cutter to cut out shapes and use a smaller shaped cookie cutter to cut out windows.

Keep re-rolling the dough until you can make 12 of these. Transfer these onto a baking tray.

Bake in the oven for 12 minutes until golden brown and firm to the touch. Leave to cool completely.

Turn the circular base cookies upside down and spread raspberry jam in the centre.

Place the cookies with the cut-out windows on top and sandwich together.
