Gluten-Free Vegan Mince Pies
Place the fruit, nuts, spices + maple syrup in a bowl and cover with brandy/sherry. Soak 24 hours.

Mix together all the ingredients for the pastry dough in a bowl.
Lay out a sheet of baking paper and roll out half of the pastry using a rolling pin.

Use a circular cookie cutter to cut circles out of the pastry.

Place these into a greased muffin or cupcake tin.

Place a heaped teaspoon of the mincemeat inside each pastry crust.

Roll out the remaining pastry and cut out stars using a cookie cutter.

Place the pastry stars on top of the mincemeat in the pie crusts.

Bake in the oven for around 20 minutes.
