Gluten-Free Vegan Pecan Pie
Mix together all the ingredients for the pastry dough in a bowl.

Use your fingers to spread the pastry along the bottom and sides of a pie dish.

Place the dates, almond butter, plant-based milk, vanilla and salt in a food processor.

Blend until completely smooth.

Transfer the filling into the pastry pie crust.

Press chopped pecan nuts into the filling.

Bake in the oven for 30 minutes. Place in the fridge for at least 2 hours before slicing.
