Place all the ingredients for the filling in a pan. Mix well until the cornstarch is dissolved.

Cook on a medium heat, stirring regularly, until thickened.

Mix together all the ingredients for the pastry dough.

Press along the bottom and sides of a pie dish.

Pour in the filling.

Bake in the oven for 40 minutes.

Leave to cool and place in the fridge for at least 2 hours before slicing.
