Gluten-Free Vegan Sausage Rolls
Fry the onion + garlic for 10 minutes until softened.

Add the mushrooms and fry for a further 5 minutes.

Place these in a food processor with the walnuts, white beans, herbs + seasonings.

Blend briefly until the mixture easily sticks together but still has some texture.

Mix together all the ingredients for the pastry dough.

Place on a sheet of baking paper covered with flour and roll out with a rolling pin.

Cut into mini rectangles.

Place a heaped teaspoon of filling in the centre of each rectangle and roll up.

Lay out on a baking tray lined with baking paper. Brush the tops with agave syrup + almond milk.

Sprinkle over poppy seeds or sesame seeds.

Bake in the oven for 20 minutes, until golden brown.
