Gluten-Free Vegan Sugar Cookies
Mix together all the ingredients for the cookie dough in a bowl.

Roll out the dough using a rolling pin and use a cookie cutter to cut out shapes.

Lay out on a baking tray lined with greased baking paper.

Bake in the oven for 10-12 minutes. Leave to cool before applying the frosting.

Place cashew nuts, maple syrup, vanilla + plant-based milk in a food processor.

Whizz until completely smooth.

Split the frosting into bowls and add different ingredients to colour, as desired.

Spread the frosting over the cookies using a knife.

Decorate with rose petals, desiccated coconut etc, as desired.
