Gluten-Free White Sandwich Loaf
Stir dry active yeast into warm milk and brown sugar.

Leave for 10 minutes until thick and bubbly.

Stir psyllium husk with water and rest for a couple of minutes to allow for a gel to form.

Whisk sorghum flour, tapioca starch, potato starch, salt and ground ginger together.

Pour in the yeast, psyllium gel, apple cider vinegar, melted butter and egg whites.

Mix well until a soft, slightly sticky dough has formed.

With flour dusted hands scrape the dough onto a clean surface and bring together.

Roll into a smooth log shape.

Place the dough into a greased loaf tin and prove for 1 hour.

Brush the risen bread with melted butter and bake for 50 minutes.

Turn out of the tin and cool completely before slicing.
