Half Of The Red Cabbage

1 Carrot
Cut 2 types of cabbage separately. Add carrot to the white cabbage and mix.

Put cabbage into a glass jar: first white cabbage and then the red one. Add water till the half.

Add something heavy on top. The water shouldn’t cover all the cabbage. It will do so in 2 next days.

Put the jar into a plate. During the fermentation the cabbage will produce some juice.

The fermentation will last for 3 days after which your sauerkraut will be ready to consume.

Add salt, olive and a bit of green onion. Sauerkraut is ready to serve!
