Peel potatoes and carrots, and cut them into 1 inch cubes.  Place in a large roasting pan.

Cut your zucchini into chunks (unpeeled) and add to the pan

Add green onions and white onion to the pan.

 Add the mint, parsley, celery stalk and leaves as well.

Finely chop the garlic and add this to the rest of the vegetables.

Add the olive oil, tomato sauce, and water

Season with salt and pepper.  Add the bay leaves.

Mix everything together so that all the vegetables are evenly coated and combined.

Bake for a total of about 1.30 minutes, stirring every 30 minutes or so.
