Extra Virgin Olive Oil
Cube chicken into 1 1/2-inch pieces.

Combine yogurt, olive oil, lemon juice & zest, garlic, oregano, salt & pepper in a bowl.

Marinate: Add chicken to the bowl. Cover and refrigerate for 30 min up to 3 hours.

Skewer chicken. Prepare grill: Brush it with olive oil or nonstick spray. Or preheat oven to 425°F.

Place skewers on grill. Cover grill and cook 7 min. Or oven roast 10 min at 425°F.

Flip! Grill another 7 min, or roast another 10 min. Chicken must reach 165°F to be done.

Serve with tzatziki sauce, roasted/grilled vegetables or potatoes.
